Evaporation happens when the fastest molecules at the surface break free and leave. Because the quickest ones go, the average energy of what stays behind drops, so evaporation cools the liquid. It speeds up when the liquid is warmer, when more surface is exposed, and when moving air sweeps escaped molecules away. Tune the conditions to dry the dish within the time limit.
