Nuclear physics.
Inside the atom: the tiny nucleus, protons and neutrons, radioactivity and half-life. Hold an electron in orbit, fire alpha particles and time a decay, all hands-on.
Space physics.
Orbits, the life cycle of stars and the scale of the universe, brought down to a screen you can scrub through. Spin the Earth through a day and lean it into the seasons, hands-on.
